Alfalfa is a super green food. It is chock full of nutrients--proteins (up to 50% by weight), trace minerals, dietary fiber, antioxidants and vitamins A, B1, B12, C, D, E and K. Because of the high chlorophyll content which is alkalinizing, it serves as an antioxidant in the bloodstream and is useful in treating overly acidic urine from bladder irritation and crystal formation.
